Recipe: Pistachio Chocolate Brownies
It's no secret that chocolate brownies are one of the ultimate comfort desserts, so I'm very excited to share this recipe with you. They are so simple to make with store cupboard ingredients and are delicious eaten when they are still warm from the oven, maybe even topped with a scoop of vanilla ice-cream!
INGREDIENTS:
100g/4oz margarine, 50g/2oz dark chocolate, 100g/4oz self raising flour, 175g/6oz soft light brown sugar,1 tsp vanilla extract, 2 beaten eggs, 25g/1 oz cocoa powder, 25g/1oz chopped mixed nuts, 25g/1oz chopped pistachios
METHOD:
- Pre-heat the oven to 180C and line a baking tray with greaseproof paper.
- Melt the margarine and chocolate in a bowl over hot water and a gentle heat.
- Allow to cool for 5-10 minutes.
- Stir in the sugar, then eggs and vanilla extract until thoroughly combined and smooth.
- Add the flour, cocoa powder and nuts and mix well.
- Pour the mixture into the tray and bake for 20-25 minutes until the middle is soft and the top begins to crack.
- Leave to cool slightly then cut into squares.
