Now it's no surprise that Christmas is my favourite holiday of the year, so seeing all of the delicious recipes everywhere at the moment has definitely tickled my taste buds. Mince pies are my favourite festive dessert - I've never really been a big fan of rich puddings and cakes- so opening the jar of mincemeat was enough to get me very excited about the coming month!

However, instead of doing the usual mince pies, I tried something a bit different and created a cake with all of the Christmas tastes- mince pie flavour? Check. Marzipan? Check. Sugar, spice and all things nice? Check!

You can serve this cake at room temperature plain or warm with cream or a spoonful of ice cream, making it a delicious lighter alternative to typical festive cakes and puddings~

INGREDIENTS:

  • 225g/8oz flour
  • 1 beaten egg
  • 75g/3oz demerara sugar
  • 75g/3oz butter
  • 2 tbsp milk
  • 115g/4oz mincemeat

For the topping:

  • 1 tbsp demerara sugar
  • 1 tbsp granulated sugar
  • flaked almonds and marzipan pieces (as much or as little as you like, I used around 2 tablespoons of each)

METHOD:

  • Preheat the oven to 200C and grease a 8 inch tin
  • Dice the butter and rub together with the flour in a bowl to create a breadcrumb texture
  • Stir in the mincemeat, sugar and egg. Add the milk to bring the mixture together in a soft dough.
  • Spread the mixture into the prepared tin.
  • In a small bowl, mix together the tablespoon of each granulated and demerara sugar, along with a few drops of water so that the sugar clumps together a little.
  • Sprinkle the sugar mix, flaked almonds and little chunks of marzipan on top of the cake.
  • Bake for 20-25 minutes until golden and firm (if the cake starts to become too golden on the top, cover with foil and continue to cook until firm and a skewer comes out clean)
  • Allow to cool for at least 15 minutes in the tin, then cut into wedges and serve.
