Branching away from my trusty Victoria sponge recipes, I found these delicious squares in the BBC GoodFood collection cookbook and decided to give them a go. I was surprised how simple they were yet they taste like a hybrid of blackberry crumble and a simple cake- so in other words, yum.

YOU WILL NEED:

CAKE:

  • 115g butter
  • 175g caster sugar
  • 1 egg
  • 280g self-raising flour
  • 125ml milk
  • 200g blackberries

CRUMBLE:

  • 115g caster sugar
  • 85g plain flour
  • 50g butter

METHOD:

  • Heat the oven to 180C. Butter and line a tin (I used a rectangular tin, but square or round will also work)
  • For the cake: Beat together the butter and sugar with an electric whisk until light and fluffy. Whisk in the egg, then fold in the flour and milk until combined well. Spoon into the tin and scatter over th blackberries.
  • For the crumble: Mix together the sugar and flour. Rub in the butter until it resmbles breadcrumbs, then scatter over the cake.
  • Bake for 45 minutes until golden and the blackberries begin to burst through. Leave to cool in the tin, before removing and cutting into squares. This recipe makes approximately 12 and best eaten on the day, but can be frozen for up to 3 months.
